For Miss Enigma’s Halloween Birthday party we decided to keep the cupcakes simple and go a little bit healthier.
I say a little bit healthier because we did start with a boxed cake-mix; however, we stuck to our two ingredient Deviously Delicious and Easy Pumpkin Muffins and Easy Spice Pumpkin Muffins. If you haven’t tried these easy recipes just click on over for a FREE printable recipe guide.
The children followed the directions from our printable recipe guides with just one little addition. Since it was Halloween night, we decided to add a chocolate or caramel candy to the top of each cupcake before baking. While baking the candy melted all ooey-gooey and yummy!
The children also made the “Happy Birthday” cupcake decorations. I simply printed a sheet of “Happy Birthday Miss Enigma” using our home computer. Then the children cut squares of scrap booking paper and assembled it all together on toothpicks. Viola, cupcake decorative toppers. Cheap and Easy!
We served pumpkin cupcakes and skipped all of the sugary icing and the cupcakes were a huge hit with the children and adults alike. Imagine that!
