Every week my husband and I get together with a group of friends to play a casual game of cards. The gracious host and hostess share a dessert with all of us card players. Here’s the problem; I’m NOT a baker. Our sister Jennifer got all the talent for baking-up sweet treats. When we have a family gathering, Jennifer is always put in charge of the desserts. Consequently, when it’s my turn to be card playing hostess I struggle with my sweet treat duties . . .
About a year ago, my card playing friends introduced me to a sweet treat that even I can bake up in a jiffy. It’s devilishly delicious and it only requires two ingredients: Devil’s Food Moist Cake Mix and Solid Pack Pumpkin (not pumpkin pie mix). It’s so easy that I taught MacGyver and Miss Enigma how to bake a batch of Devilishly Delicious Pumpkin Muffins! Since then, I’ve actually been experimenting and putting new twists on this simple dessert.
Easy Party Pumpkin Cake with Orange Glaze
- 1 box Devil’s Food Moist Cake Mix,
- 1 can Solid Pack Pumpkin (not pumpkin pie mix)
- 1 tsp pumpkin spice (optional)
Orange Glaze (optional)
- 1 cup confectioners sugar
- 2 tbsp fresh squeezed orange juice (adjust to desired consistency)
- zest of one orange
Preheat oven to 350°. Mix cake mix and pumpkin. Pour batter into a greased 7 x 11 inch baking dish. Bake for about 25 – 30 minutes or until tooth pick comes out clean. Cool completely before frosting.
My husband has an enormous sweet tooth and loves chocolate. Just for him, I added about a half cup of dark chocolate chips to the batter before baking.
While the cake cooled, I mixed together the confectioners sugar, orange juice and orange zest.
You can drizzle the glaze over the entire cake or drizzle over each cake slice as you serve. The glaze looks really pretty drizzled on each plate. It even looks fancy. Imagine a fancy dessert from me. It didn’t snow but it did rain during our Texas drought!
