I’m a year behind. Seriously, I’m a full year behind! Last week Miss Engima celebrated her 6th birthday with an Operation Christmas Child Packing Party. But what happened to her 5th birthday party? No, we didn’t skip her birthday last year . . .
Last year, the kiddos baked delicious Mini Cheesecakes for Miss Enigma’s 5th birthday. I took bunches of pictures but never got around to posting the ultra easy and yummy recipe. I live my life by the saying, “Better late than never!” These birthday cupcakes were as big hit with the adults as the children!
Mini Cheesecakes

Ingredients:
- 2 pkg. (8 oz each) cream cheese, softened
- ½ cup sugar
- ½ tsp. vanilla
- 2 eggs
- 12 OREO Cookies
- Sliced fresh fruit
Tools
- muffin tin
- measuring cups & spoons
- bowl & mixer
- spatula
*Preheat oven to 350 degrees F.
Step 1: Beat cream cheese, sugar and vanilla. Add eggs and mix until just blended.
Step 2: Place one cookie in the bottom of 12 cupcake liners.
Step 3: Top with cream cheese mixture. Bake for 20 minutes.
Step 4: Cool. Refrigerate for 3 hours. Top with sliced fruit.
This year Miss Enigma announced she wanted to bake Mini Cheesecakes again. We followed the same directions but changed up the decorations. Miss Enigma loooooooves dogs, hence the doggie decorations.
And after much begging . . . Our family grew by four feet. We’ve added another little rescue doggie to our family. (Don’t Shop. Adopt!) Meet Autumn, Miss Enigma’s birthday present. Happy Birthday to our little enigma!
