I had my doubts when Aunt Joyce first introduced us to this ultra simple 2 ingredient pumpkin cake recipe. When she told me all we had to do was mix a can of pumpkin (not pie mix) into a box of Devil’s Food Cake Mix, I thought she was crazy. But surprise, surprise! These pumpkin cupcakes are totally delicious. We’ve baked many versions of this recipe and all have been a huge hit with our family and friends.

Here’s what you need: 1 box Devil’s Food Moist Cake Mix (or spice cake mix),   1 can Solid Pack Pumpkin (not pumpkin pie mix)

Seriously! That’s it! So make an easy sweet treat this Thanksgiving, put your feet up and watch the parade!

I make the spice cake version with the pumpkin and call them muffins. We have them for breakfast sometimes. They are pretty healthy considering…at least the spice cake ones are (without icing or glazes)…not sure about the chocolate. I found this recipe on a weight watchers recipe board a few months ago and we have enjoyed it ever since. Never thought to try it with other flavors of cake. Thanks for the idea! And you’re right…they are extremely moist!
