Looking for an easy Christmas treat? The kiddos and I combined our supper easy mini cheesecake recipe with strawberry hats to create these ultra cute and tasty Mini Santa Cheesecakes for our friends and neighbors. I like simple, especially this time of year. Who am I kidding, when it comes to baking, I keep it simple all year long!

Mini Santa Cheesecakes: FREE printable recipe guide

Ingredients:

  • 2 pkg. (8 oz each)
  •    cream cheese, softened
  • ½ cup sugar
  • ½ tsp. vanilla
  • 2  eggs
  • 12 OREO Cookies
  • 12 strawberries
  •  Easy Frost Icing

Tools:

  • muffin tin and liners
  • measuring cups & spoons
  • bowl & mixer
  • spatula

*Preheat oven to 350 degrees F.

Step 1: Beat cream cheese, sugar and vanilla.  Add eggs and mix until just blended.

Step 2: Place one cookie in the bottom of 12 cupcake liners.

Step 3: Top with cream cheese mixture. Bake for 20 minutes.

Step 4:  Cool. Refrigerate for 3 hours. Make Santa Hats with strawberries and icing.

Ho! Ho! Ho! It’s that easy!

Very cute! I made these, per your recipe, (minus the Santa hats) for my son’s birthday last month. They were a huge hit. Very yummy!

I really like the mini cupcakes for birthdays because they aren’t too sweet and both kiddos and adults love them. I’ve got a new twist coming to knock some of the sugar out of the recipe! I’ll try to post soon. Still yummy!
